1. Preheat oven to 375 degrees.
2. In a large bowl, combine dry ingredients with a whisk; set aside.
3. In a separate mixing bowl, beat eggs. Add honey, orange juice, butter/margarine and vanilla; mix well. Stir into dry ingredients just until moistened.
4. Fill 12 greased muffin cups or paper/foil lined tins 2/3 full.
5. Bake for 15-20 minutes or until golden. Cool in muffin tin for 5 minutes then remove to cool on rack. Makes 1 dozen.
