Oatmeal Banana Muffins

This is one of my favorites!
Ingredients
½ cup vegetable oil
2 eggs
1 cup mashed bananas (2-3)
½ cup honey
¼ cup yogurt (plain regular or unflavored Greek)
1 tsp. baking soda
1 ½ cups whole wheat flour 1 cup rolled oats
Directions
1. Preheat oven to 375.
2. Combine oil, eggs, bananas and honey.
3. In a separate dish, mix the yogurt and baking soda (it will expand and foam); add it to the first mixture.
4. Add flour and oats; mix well.
5. Bake in greased muffin tins or paper/foil lined tins for 15-20 minutes. Let cool in tin for 5 minutes then remove to cool on rack. Makes 12-14 muffins.
